Show the Love

Your Ken Fuyuki Carbon Steel Knives are not like those stainless steel knives that you throw away in the sink or dishwasher. They demand respect and need to be taken proper care of. Show them the love and they will stay with you, forever!

    Hand wash your knives with soapy water to remove any dirt or debris left over from the manufacturing and shipping process.

    Wipe dry immediately with a soft, non-abrasive cloth or towel. Make sure there is no water left on the surface.

    Everytime you cut an acidic fruit or vegetable, wipe the blade with a cloth. Don't let the acid or any other liquid stay on the surface for too long.

    Avoid cutting extremely hard or frozen items like bones, seeds, or metals with your knife. This may damage the edge.

    It is recommended to use a wooden cutting board. This is the safest option for both you and your knife.

    After use, wash the blade with normal or soapy water. Make sure that you dry it off immediately as high-carbon steel blades have a tendency to accumulate rust easily.

    Do not wash the blade in a dish washer. Also, do not air dry the blade. Use a cloth to wipe it instead. Do not leave your knife in the sink or pile heavy utensils on top.

    Before storage, put on a few drops of edible oil (e.g, olive oil) on both sides of the blade and spread it across. Over time, a natural patina will be formed that will protect the blade.

    Use the Ken Fuyuki Sheath to store your knife. This will protect the edges of your blade from damage.

    We recommend using a traditional whetstone at a 15-degree angle to sharpen the blade. If you are not confident with sharpening yourself, please take your knife to a local blacksmith.

    Always use a traditional whetstone to sharpen your blade. You can use the pocket whetstone we provide with the sheath to hone your blade before use.

    Please refrain from using honing rods/steels or any other kind of sharpening device (hand held devices, electric sharpeners, grinders, oil stones, etc.).
